Köppel scored 83 goals in the West German top-flight. For the West Germany national team he collected 11 caps. As a player, he won the UEFA Euro 1972, was a European Cup runner-up in 1976–77, won the UEFA Cup in 1974–75 and 1978–79, and was Bundesliga champion in 1969–70, 1970–71, 1974–75, 1975–76, and 1976–77, and Bundesliga runner-up in 1973–74 and 1977–78. As a coach, he won the DFB-Pokal in 1988–89 and the DFL-Supercup in 1989.

A defining chapter of Köppel's managerial career unfolded at Borussia Mönchengladbach. After serving as the manager of their reserve side starting in July 2004, he stepped up to become caretaker manager on 27 October 2004 following Dick Advocaat's arrival. However, his time as interim was short-lived; Advocaat ended his stint as caretaker on 1 November 2004. Köppel returned to the reserves briefly before a pivotal moment: when Advocaat resigned on 18 April 2005, Köppel assumed control of the senior squad once more. He led the team until being sacked on 16 May 2006. His career continued with a brief tenure at Al-Wahda FC from August to October 2006 before his final appointment at Ingolstadt 04 in April 2009, where he remained until November of that year.
